In 2022, we opened our biggest restaurant, Monday, a 13,000-square-foot venue designed to transform the dreaded start of the week into an eagerly anticipated day. Most people look forward to Fridays, but we wanted Monday to be seen as a fresh start to a week filled with new possibilities.
